It may be advantageous to consider the installation of more grease traps,either at the sinks,or outside <br /> the building to give the waste a chance to cool for better grease separation and retention. <br /> • It is up to you as to whether to continue or expand the use of additives. If you plan to continue their use, <br /> please send me a specification sheet of the components in the additive. Also,the kitchen employees should be <br /> educated on the proper disposal of greases,and solid kitchen wastes.
