• <br />b. Each category of the "Food Service Specifications" as outlined in the bid <br />package and incorporated by reference as an integral part hereof must be <br />followed. <br />c. Each meal shall comply with all applicable regulations of the Department <br />of Health and Human Services, Administration on Aging, and the North <br />Carolina Division of Aging Service Standards Manual, Volume I, <br />Congregate NutritionlHome Delivered Meals, pursuant to the -Older - - - <br />Americans Act, as amended. <br />r~ <br />L <br />r1 <br />U <br />d. Menu substitutions will not be allowed except under extreme <br />circumstances. If such a circumstance arises, food substitutions shall be <br />approved by the person(s) responsible for menu review to ensure meals <br />meet one-third of the daily Recommended Dietary Allowances. The <br />dietitian responsible for menu review must be consulted and give approval <br />to the substitution at least .one (1) day prior to the proposed change. <br />Documentation that the substitution has been approved must be on file <br />within 90 days of serving or, in the case of the fourth quarter of the state <br />fiscal year, not later than July 31. -Meals with substitutions not approved <br />in this manner are not eligible for reimbursement. Any deviation from the <br />certified menu must be documented by a menu change form ,and the <br />specific food substitution listed. The menu change form must be dated <br />and signed by the person authorizing the change. Change forms shall be <br />kept on file with the certified menu for audit. The Caterer will be <br />responsible for assuring that all menu substitutions meet one third (1/3) of <br />the daily recommended dietary allowance for adults over age 60 and <br />conform to the meal pattern as set forth by North Carolina Division of <br />Aging and Adult Services. All permanent changes in menus must be <br />documented and recorded at the time they. are incurred and all <br />substitutions must include the same nutritional requirements as the <br />original item. All permanent changes must be approved by County prior <br />to food service. No more than one substitution, whether temporary or <br />permanent, are allowed per month. <br />e. Any meal that does not meet one-third (1/3) RDA and the meal pattern <br />and service standards, and is served to an eligible adult, is not a reportable <br />unit~of service for reimbursement or USDA entitlement. <br />11. Meals will not be sewed on the following days and the holiday schedule to be <br />observed for the purpose of this Agreement is as follows, but may be altered by <br />mutual written agreement of the parties. <br />New Year's Day <br />Martin Luther King Jr. Day. <br />Good Friday-Easter <br />Memorial Day, <br />.. Independence D.ay <br />'" Labor Day <br />Thanksgiving Day and day after <br />Christmas Day and the days preceding and following it <br />12. Caterer will invoice County monthly at the rate of $3.75 plus sales tax per <br />congregate meal delivered which includes delivery charge. Billing by Caterer <br />
